Well, it’s been quite some time since I’d made anything in my Virginia house, but today I made my absolute favorite. People always tell me how yummy this recipe is so, when I make it, I triple everything so that many others benefit.
MattBob’s Tunafish
1 small tin of tuna (spring water)
1/2 cup chopped celery (usually one stalk)
1/3 cup chopped onion (about half of a small/med)
1/3 cup cucumber relish
4 Tbsp mayo (i use Trader Joe’s organic mayo)
salt & pepper
fresh lemon juice
Chop veg (if you have a little extra, toss it in, veggies are your friend). Cup out relish (drain away most juice). Add drained tuna (again, try to remove most water) Season with salt and pepper. Mix. Add 3 Tbsp of mayo. Mix. Determine how much more you are going/want to need and do so to taste. Squeeze off some fresh lemon juice and resample. Voila!
Yes, I like my tunafish with lots of flavor and minimal mayo.. crunchy veg rock!
